Summer, Strawberries and whipped cream are a dream together. It can be enjoyed as is, or why not make it into this very luxury but super easy “Swedish Strawberry Cake”?
The best part is that you don’t need to be a pastry chef to manage to do this cake. It is so easy, and only your imagination is the limit. You can create the feeling as if you just brought it from the bakery, without the hassle of even leaving your home.
Another great part is that this cake does not have any butter in it, except the tiny amount that you might grease the form with and the percentage the whipping cream comes with. If you want a more light cake than it already is, simply choose a whipping cream with less or no fat.
It is a light cake, which is great once you enjoy it in the summer afternoon.
This cake in itself takes almost no time to prepare, so if you are using the oven one day, just whip this up and save it in the fridge until it is time to decorate. (…perhaps a couple of days later?) By doing so you save some gas or electricity, plus you are kind to the environment. Also, before we start, do you know about the Swedish Fika culture?
So let’s bake this “Strawberry Summer Cake” for real!
P.s. The example shows a half cake decorated since we decided to save the other half for another time. The bottom cake works perfectly to freeze.
You’ll need:
3 Eggs
1 Cup Sugar
1 + 1/4 Cup Flour
1 tsp Baking Powder
1/4 tsp Baking Soda
Whipping Cream
Strawberries
Directions:
- Heat up the oven to 400 degrees.
- Whip 3 eggs with 1 cup of sugar. Best is if you do it really fluffy in a mixer for a couple of minutes.
- In a separate bowl, mix 1 + 1/4 cup of flour together with 1 tsp baking powder, and 1/4 tsp baking soda.
- Fold in the flour mix together with the egg/sugar mix.
- Grease and flour dust a round baking form in which you pour the batter in.
- Bake for 20 minutes, but keep your eyes on it since ovens can act differently. (A baking needle should come out dry.)
- Let the cake completely cool down.
Final Decoration:
- Slice the cooled down cake horizontally so it creates 2 layers.
- If you feel lucky, try making a second cut, so you get 3 layers.
- Whip the cream until a foam takes shape. You can add a tsp of sugar for extra flavor.
- For the middle layer, chop a desired amount of strawberries to small dices and mix it with a little bit of the whipped cream.
- Use the rest of the whipped cream to cover the whole cake, try to smooth it out as good as you can.
- Decorate the top with halves or slices of strawberries.
- Personally I enjoy to top it with some chopped dark chocolate.
The leftovers of this summer cake are going to taste great the next day too, and the next.
