When life gives you lemons, Springtime is here, and it is time to make LEMON BARS. This easy treat tastes so refreshing and can really uplift the mood. The vibrant yellow color just adds a smile to the day.
This recipe is not complicated at all. Just mix the crust, bake it for 25 minutes. Then take it out to cool down while you start the filling. Bake it all again, and let the wonderful creation melt your worries away.
It taste great with a little dusting of powdered sugar, and as a colorful addition to your next whimsical spring tea party.

Lemon Bars Recipe – An uplifting favorite for your Springtime Tea Party.
Crust Ingredients:
12 Tbsp Butter (one and a half sticks)
1/2 Cup Powdered Sugar
1 + 1/2 Cup Flour
A Pinch of Salt
Filling Ingredients:
1 Cup Sugar
2 Tsp Lemon Zest
6 Tbsp Lemon Juice
2 Eggs
2 Egg yokes
1/2 Tsp Baking Powder
2 Tbsp Flour

Instructions (It is so easy):
Preheat the oven to 350 degrees (F).
In a bowl, combine all the ingredients for the crust. Start with the Butter and Powdered Sugar, then add the Flour and Salt. Kneed it until it holds together. Press it out on a 9×9 inch baking form. (8×8 works well also.)
Bake the crust in the oven for about 25 minutes. Then, take it out to cool while you start to mix the filling.
The reason you should avoid mixing the filling ahead of time is because you are using eggs and citrus together.
As the crust cools down, mix all the ingredients for the filling together (add the Flour and Baking Powder last.)
Pour the filling over the crust and bake for another 20-23 minutes.
Once cooled down, cut it into bars of the desired size. For an extra festive touch, dust the bars with some powdered sugar before you enjoy them.
