It is tiny, yet the queen of the Swedish Fika table. The Raspberry Cave, a Swedish cookie that is as simple to make as it is to finish the whole tray.
It belongs to the family of “Småkakor” (Tiny Cookies) and is besides “Swedish Cinnamon buns” one of the most enjoyed cookies in Swedish homes. Is it a birthday, graduation, or wedding, it’s there on the table staring at you with the iconic click of raspberry jam. (P.s. You can use any kind of jam/jelly as you like. One reason this tiny cookie has entered the Swedish Fika throne is most likely its simplicity. It does not have to be complicated to bake, and here is the proof.
Swedish Raspberry Caves
Ingredients:
2 sticks of butter
2 cups of flour
1 tsp baking powder
1/3 Cup Sugar
1 tsp vanilla (if you don’t have vanilla, use the zest of a lime)
1 tsp cinnamon (optional)
Let’s bake, so we can have a Swedish Fika!

Directions:
Place the butter at room temperature while preheating the oven to 400 degrees.
Mix all the dry ingredients in a bowl, add the softened butter and mix well using your hands until you have a lump that does not fall apart.
(If it falls apart you might have used too much flour, but it is easily savable by adding a few teaspoons of cold water.)
Make a roll of the lump, and cut it into even 1-inch pieces.
Take each piece in your hand and roll them to balls.
Place them on a baking tray and gently press down your thumb in each one of them. Fill the thumbprints with a click of your favorite jam. (The tradition asks for raspberry.)
Bake them at 400 degrees for about 12 – 15 minutes

You had me at “raspberry”. Swoon! There are exceedingly few fruits that I don’t like or love, but ever since I was a wee lass, none have found as much favour with me as raspberries. A passion that I am certain was bolstered all the more by spending many a happy summer day helping my paternal grandparents pick raspberries in their lush backyard garden.
