This delightful cake goes great with the summer Fika and has one of the most whimsical names a cake can have, “Rooster Cake.” However, it does not have anything to do with the bird.
There is a theory behind this whimsical name, that in Swedish is called “Tuppkaka.” It is said that there once was an island called “Tuppen.” (“The Rooster”)
As the wives saw their fishermen-husbands returning from the shore, they quickly mixed this quick cake together. The sea-salted fishermen would enjoy this sweet and delightful treat after their long night out on the ocean. Together with a cup of coffee or tea, it sounds exactly like the right kind of treat.
Customize the “Rooster Cake” however you like. Whatever flavor you fancy for your Swedish Fika time.
It is a personal summer favorite if you ask us. Very much because it is simple and can be customized with an endless amount of flavors. The cake in itself is the same, but the topping can be anything from sliced strawberries to sliced kiwi. The imagination is the limit.
Our previous recipe “Swedish Raspberry Caves” is an excellent choice to serve together with this cake if you want a summer combination that your fika guest will talk about for a long time.

Swedish “Rooster Cake”
Ingredients:
3 eggs
3/4 cup of Sugar
1 + 1/4 cup of Flour
1 tsp baking powder
1/4 tsp baking soda
+ Sliced Strawberry and a little finely shredded butter
as a topping before it goes in the oven.
Let’s bake, so we can have a Swedish Fika!

Directions:
Preheat the oven to 400 degrees (F).
In a bowl, mix the Eggs and Sugar very fluffy for a couple of minutes.
In another bowl, mix Flour, Baking Powder, and Baking Soda.
Add the flour mixture to the egg mixture.
Grease an 8-9 inch pan (The kind you would use for a sponge cake)
Add the batter, and before you put it in the oven, add the sliced
Strawberries and sprinkle some finely shredded butter on top.
(I’d say around 3 – 4 tbsp)
Bake for about 20 minutes,
or until an inserted toothpick comes out dry.

Just made this cake for my Fika time but added blackberries as well as strawberries. It rose quite a bit more than I expected and has a nice slightly sweet & buttery taste. Thanks for the recipe!🥰

A cake that is sweet in more ways than one. So lovely and inviting! Huge fan of strawberries though I am, I’d be tempted to put some of the scrumptious local peaches (or plums) that grow abundantly in our region to use in a rooster cake of my own. As fall nears and arrives, I could see apples or pears and warm spices being sublime as well.
