Dear Friends, every time you feel like having something extra for your fika-time, the most rewarding thing to do is to bake it yourself. Baking should not be hard and complicated, it should be fun and boost your self-confidence, like this delightful Swedish Sponge Cake.

At first glance, it might seem like a plain boring cake. It does not have exciting frosting or crumbly baked architecture on top of it. Neither does it consist of ingredients with complicated names. But, what is so special about this cake is that you will often find it as a part of a Swedish fika time. It’s a an old and timeless recipe that is just right. The Swedish name for it is “sockerkaka” which literally translates to “sugar cake.”

Sponge cake might seem simple but comes with endless opportunities.

You to customize to your own delight by just adding your favorites to this basic recipe. In this example, we added blueberries, lemon, and with the risk of sounding too decadent, we also added chocolate. (We melted a little chocolate which we whisked down in half of the batter.) The result was lovely, and the reward itself of investing a little time in the kitchen tasted as good as the cake. But don’t take my words for it, why not try it yourself. Everyone can bake!

You’ll need:
Butter: 5 tbsp (75 g)
Milk: 1/2 cup (1 dl)
Egg: 2
Sugar: 3/4 cups (2 dl)
Vanilla: 1 tsp
Flour: 1 cup + 1/4 cup (3 dl)
Baking powder: 1½ tsp


Examples of flavors you can add:
– Lemon (squeeze one)
– Blueberries (or other berries)
– Chocolate (melted, or like chips)
– Walnuts (our your favorite type of nut)


So, let’s bake!

  • Preheat the oven to 350 F. (175 C)
  • Grease one normal-sized form. (bread crumb if desired or sprinkle cinnamon to give it a warm flavored crust.)
  • Melt the butter in a pot over the stove, add milk and let cool down.
  • Whisk the eggs and sugar fluffy.
  • Add Vanilla, Flour mixed with the Baking Powder. Add the Butter/Milk mix.
  • Bake in the lower oven around 35 minutes.

Some ovens require longer vs shorter times. Just keep an eye on it.
Usually, a delightful smell tells that it is done, plus poking it with a baking needle.
As it’s cooled down, RELAX and ENJOY during fika time…you deserve it!
